Why Butter 101? Because I love butter. So did my grandmother. And her grandmother before her. There is nothing more nourishing on the planet that is so easy to obtain. Since 1926, consumption of butter has dropped precipitously, at the same time cancer and heart disease has soared. It’s not because of butter! Eat more butter my friends!

Last month, you helped submit a record-breaking number of comments – more than one million – to the U.S. Food & Drug Administration (FDA) in favor of labeling genetically engineered foods.

Weekly member letter 1
Remember when Heather made fermented veggies? Well, she has moved on to reaching a much bigger audience with her mission. Watch her audition and give her a good vote and share! One day we can say "she is one of our own!"
Now this one should have you running from conventional chickens (thank you, Gerri for sharing this one). You know, chicken is the LAST thing I will order when dinning out. When deciding what to order I always ask what fish is wild caught and try not to go to restaurants that don't offer wild caught fish. If they don't offer wild caught fish then it is a crap-shoot, but I never order the chicken. Hold on to your breakfast when you read this... http://www.nytimes.com/2012/04/05/opinion/kristof-arsenic-in-our-chicken.html?_r=1&src=tp Ok, off to plant some herbs and Oak Leaf lettuce seeds (thanks to Sigi!). What a great way to celebrate spring

Best way to cook bacon
- Pre-heat oven to 400 degrees
- Place bacon (from pastured pigs) on cooling racks in a cookie sheet with sides.
- Put in oven for 10 minutes then turn off oven.
- Leave in oven for another 10 minutes (I know it is tempting to open the door and look at it, but trust me, the bacon will still be there).
- Remove and enjoy. And save that perfect grease for cooking eggs, sauteing veggies, whatever.
- Put leftovers in an airtight container in refrigerator. Simply reheat in a toaster oven as desired.
This method also works perfectly for sausage cut into 1/2 to 1 inch slices. Yummmm.
